Daily Activity

Halo everyone!
Hope you guys doing well! Back to the kitchen daily in my college Poltekpar Makassar. So this is my first day in this week after teori class last week. It was great, got some homework and also beautiful weekend. Today, my group and me got Pastry Section of European Buffet. The menu is Red Velvet Roll and Flacky Crust Pie. Also we made some Toast Bread for Club Sandwich tomorrow and didn't forget about Custard for The Pie.

Red Velvet Roll is kind of Sponge Cake, just need more Red Colour and Roll it between Cream. But for today we just made the Cake, because Cream Cheese not exist yet today but tomorrow supplier will bring it here so we will make The Cream tomorrow morning before our dessert out to The Restaurant tomorrow as Lunch for the guest of Our Restaurant.

Flacky Crust Pie is a pie like usually pie, but we made it with a different method. One of the method is by Sous Vide, before we start made it we did Sous Vide method on our Egg Yolk for 45min. Put it on cold temperature so the Egg Yolk will not cooked before we used it. After that, we made the dough. This is some picture of Ingredients and procces of Flacky Crust Pie :
Sugar Powder

All Purpose Flour

Baking Powder

Salt

Almond Powder

Unsalted butter

Egg Yolk

This the dough before bake and also after we mix the dough, we rest it on chiller for maybe 1 hour so will be easy to put it on Pie Pan.

How to bake it is on 150°c for 20mins.
So guys today is not really tired because pastry is not really hard but back to the point im not really pastrier so i still need my friends helped to do it.
