Mid Activity IND

Halo teman-teman,

Selamat datang selamat datang!

Entah bagaimana kami gagal.

Selamat datang hari Rabu!

Tapi tetap saja aku melakukan metodenya, aku masih gagal. Tapi jangan pernah menyerah. Coba lagi besok dengan semua teman saya sampai sukses.

Hai semuanya!
Selamat datang kembali di blog saya!
Hari kedua minggu latihan, saya masih mengerjakan croissant saya.

Kind of Tomatoes

1. Cherry

Cherry tomatoes are the darling of every salad bar, crudité platter, and pasta salad. And for good reason—their small, uniform size makes them the perfect bite in a variety of dishes, hot and cold. Try slicing them in half and dressing them with a spicy vinaigrette, or let them shine bright with this pasta salad.

2. Beefsteak

Because they’re both bigger and sturdier than other tomato varieties, beefsteak tomatoes will work well in any recipe that showcases them. Slice them thick and add them to a burger. Layer them with some decadent mozz and basil for a Caprese salad. Combine them with other summer produce for a total treat.

3.Heirlooms

Striped, rainbow-hued, marbled, misshapen; you’re looking at gorgeous heirloom tomatoes, and they’re the real deal. Heirlooms come from seeds that have been passed down through several generations of farmers, which is why you most often find them—and only in the summer—at your local farmers market. Forgive us for making such a sweeping statement, but heirlooms might be our favorite.

They’re delicious on their own, or dressed very simply—add a swirl of olive oil and a bit of flaky sea salt to a thick slice and you’ll be amazed. If you want to incorporate heirlooms into a meal, toss them in a salad, or puree them for a gazpacho.

Bread Corner ( Exam Day )

Halo guys,
How you feeling today ? me, i feel so tired but also happy because i passed the hard day. the hard day i mean is exam day. Exam day is Bread Corner. Chef divided us to be 4 groups, and 1 day is day for 1 group to serve bread corner, also get chance to prepare everything before the exam day come.

My group have to serve bread corner in Wednesday. we actually should prepare everything in tuesday but for get the best bread and not to be rush, we decided to come and prepare everything in Monday. we have lot of time to think and prepare everything. Me and Dwiky will make Croissant, focus in Croissant actually. in monday we made 1,5kg Croissant dough, failed once but the other are succes, we also made pita bread and pain au chocolate. After finished it, we keep it in chiller so it will be fine to be bake or reheat in Wednesday.

Tuesday morning, i came ealier than all of my group friend because i want to make video project about "How To Make Croissant", i will upload the video in my youtube channel and also will upload in my blog so just wait for it. Back to the activity, I made the same dough as yesterday 1,5kg Croissant and made some Pita bread, Pain au chocolate and also chocolate croissant. Before we go home, we literally make sure everything is finish so tomorrow morning we will not be rush to serve everything.

The exam day is finally come. i came early morning because i need to reheat all bread and also prepare to serve or set up in Rektorat Poltekpar. at 9am everything is ready to set up and we opened at 10am. Here is some picture of the activity :

We closed at before 12am, because all bread and tarlet are finished.
we also got more than 20 Good score from lectures.

Thank you for read my blog! Enjoy holiday and get some rest, it's not the end but new knowledge are waiting for me and my classmate.
bye.

Daily Activity ( Croissant D9 & Tarlet )

New day guys!
Today is the last day of Croissant, it's actually Tarlet day but i have no idea how to make tarlet so i will just learn more about croissant and ask basic about tarlet in my friend because some of the are so good on tarlet.

Tarlet almost look like pie dough but probably different recipe and method, also filling. Im just helping my friend to make it. They tried like few recipe because failed it and till finally its perfect. Tarlet could be keep in freezer if you dont want to use or to eat fresh.

After got the best tarlet, we cleaned the kitchen together with my junior and then waiting till everything is clear also the floor dry. We came back home around 6pm.
Next practice will be exam for Bread Corner in Rektorat Poltekpar.
see you in exam blog!
Thank you

Daily Activity ( Croissant D8)

Halo everyone!
It's the 8th day already im fighting for my lovely perfect croissant, but still failed. anyway failed is part of success so i wont give up till i did the best i can do. Yesterday i failed it again, so i started over again. I feels like challenged.

The method and recipe still same, but this time i will be more patient and be more nice to my dough. After i made the dough yesterday, i made the croissant fat. the way still same. Then i started to put the croissant in the dough but first roll the dough as thick as i can so it could cover all the croissant fat. Next is rolled it and Folded it.

Keep the dough cold, that's mean after fold you sould put it back to the fridge or chiller. I did that for 3 times, so it probably took 3 hours. Before we go to the next step, i want to share 2 kind of fold dough there are Single and Double. For first fold i usually use single fold, second is double and the last is single again. why do i mix it ? because it will make more layers in croissant but need to keep it cold so the butter will not melt.

Thank you for today,
will be continue in the next blog.

Daily Activity ( Croissant D7 )

Welcome welcome!
Did you read my blog yesterday ? before this! why ? because you will be confused if read this and didnt read the previous blog :( or not at all :( I will put the previous link down here so you can read it. This blog is next blog, let's get start it!

After prepare the dough and keep it all night, next step is you must prepare the croissant fat or pastry shortening. In recipe is 225gr of Croissant Fat. For some chef how they make the fat looks like. This time im gonna give some advice basic on my experience.

One of the method of making the croissant is First scale it for 225gr, then put it in the middle of plastic roll, next is fold the plastic to warp all of the croissant fat then roll it till 0,5mm. Make sure it will be fit in your dough, and also make sure its not frozen if you want to put in side the dough. After the croissant fat looks perfect, keep it in Freezer to make it stay cold.

here is picts of that method for croissant fat :

Thank you for read my blog today, i actually should write everything but i failed it again so i started over the dough and the croissant fat tomorrow.
see you tomorrow.

Daily Activity ( Croissant D6)

hii everyone!
welcome back to my blog! it's the third week of practical and will be same like usually we need to focus on croissant. Even though we failed many times doesnt mean we will give up. try again with another method but same recipe, recipe by Antonio Bachour.

This morning we start at 7am. With a little advice from Chef Ical, we started with Bismillah. I made croissant half recipe of Bachour and also with Bachour method. A bit more easy for now because i knew some mistaken that i did. This time i use Fresh Yeast from Sour Dough.

Here is the recipe :
-Flour 375gr
-Sugar 56gr
-Unsalted Butter 25gr
-Salt as needed
-Fresh Milk 250gr
-Croissant Fat 225gr

The method of Bachour is mix all ingredients together in one bowl except Fresh Yeast. Mix it for about 3 or 5 minute and then add milk little by little till 5minute. After that add Fresh Yeast in a bowl, and mix it for 20minutes until the dough sticky or elastic. If the dough is elastic enough, take it off form the bowl and kneading it until soft like a baby cheeks and put it in Fridge for all night.

Thank you for read my blog! will continue tomorrow!

Kind of Seeds II

1. Sesame Seeds

Image result for sesame seeds
Sesame seeds are commonly consumed in Asia, and also in Western countries as part of a paste called tahini.

Similar to other seeds, they contain a wide nutrient profile. One ounce (28 grams) of sesame seeds contains :
Calories: 160
Fiber: 3.3 grams
Protein: 5 grams
Monounsaturated fat: 5.3 grams
Omega-6 fats: 6 grams
Copper: 57% of the RDI
Manganese: 34% of the RDI
Magnesium: 25% of the RDI

Like flaxseeds, sesame seeds contain a lot of lignans, particularly one called sesamin. In fact, sesame seeds are the best known dietary source of lignans.

A couple of interesting studies have shown that sesamin from sesame seeds may get converted by your gut bacteria into another type of lignan called enterolactone.

Enterolactone can act like the sex hormone estrogen, and lower-than-normal levels of this lignan in the body have been associated with heart disease and breast cancer.

Another study found that postmenopausal women who ate 50 grams of sesame seed powder daily for five weeks had significantly lower blood cholesterol and improved sex hormone status.

Sesame seeds may also help reduce inflammation and oxidative stress, which can worsen symptoms of many disorders, including arthritis.

One study showed that people with knee osteoarthritis had significantly fewer inflammatory chemicals in their blood after eating about 40 grams of sesame seed powder every day for two months.

Another recent study found that after eating about 40 grams of sesame seed powder per day for 28 days, semi-professional athletes had significantly reduced muscle damage and oxidative stress, as well as increased aerobic capacity.

2. Pumpkin Seeds

Image result for pumpkin seeds
Pumpkin seeds are one of the most commonly consumed types of seeds, and are good sources of phosphorus, monounsaturated fats and omega-6 fats.

A 1-ounce (28-gram) serving of pumpkin seeds contains:
Calories: 151
Fiber: 1.7 grams
Protein: 7 grams
Monounsaturated fat: 4 grams
Omega-6 fats: 6 grams
Manganese: 42% of the RDI
Magnesium: 37% of the RDI
Phosphorus: 33% of the RDI

Pumpkin seeds are also good sources of phytosterols, which are plant compounds that may help lower blood cholesterol.

These seeds have been reported to have a number of health benefits, likely due to their wide range of nutrients.

One observational study of more than 8,000 people found that those who had a higher intake of pumpkin and sunflower seeds had a significantly reduced risk of breast cancer.

Another study in children found that pumpkin seeds may help lower the risk of bladder stones by reducing the amount of calcium in urine .

Bladder stones are similar to kidney stones. They’re formed when certain minerals crystalize inside the bladder, which leads to abdominal discomfort.

A couple of studies have shown that pumpkin seed oil can improve symptoms of prostate and urinary disorders.

These studies also showed that pumpkin seed oil may reduce symptoms of overactive bladder and improve quality of life for men with enlarged prostates.

A study of postmenopausal women also found that pumpkin seed oil may help reduce blood pressure, increase “good” HDL cholesterol and improve menopause symptoms.

3. Sunflower Seeds

Image result for sunflower seeds
Sunflower seeds contain a good amount of protein, monounsaturated fats and vitamin E. One ounce (28 grams) of sunflower seeds contains :
Calories: 164
Fiber: 2.4 grams
Protein: 5.8 grams
Monounsaturated fat: 5.2 grams
Omega-6 fats: 6.4 grams
Vitamin E: 47% of the RDI
Manganese: 27% of the RDI
Magnesium: 23% of the RDI

Sunflower seeds may be associated with reduced inflammation in middle-aged and older people, which may help reduce the risk of heart disease.

An observational study of more than 6,000 adults found that a high intake of nuts and seeds was associated with reduced inflammation.

In particular, consuming sunflower seeds more than five times per week was associated with reduced levels of C-reactive protein (CRP), a key chemical involved in inflammation.

Another study examined whether eating nuts and seeds affected blood cholesterol levels in postmenopausal women with type 2 diabetes.

The women consumed 30 grams of sunflower seeds or almonds as part of a healthy diet every day for three weeks.

By the end of the study, both the almond and sunflower seed groups had experienced reduced total cholesterol and LDL cholesterol. The sunflower seed diet reduced triglycerides in the blood more than the almond diet, though.

However, “good” HDL cholesterol was also reduced, suggesting that sunflower seeds may reduce both good and bad types of cholesterol.

Kind of Seeds

1. Flaxseeds

Flaxseeds, also known as linseeds, are a great source of fiber and omega-3 fats, particularly alpha-linolenic acid (ALA).

However, the omega-3 fats are contained within the fibrous outer shell of the seed, which humans can't digest easily.

Therefore, if you want to increase your omega-3 levels, it’s best to eat flaxseeds that have been ground.

A 1-ounce (28-gram) serving of flaxseeds contains a wide mix of nutrients:
Calories: 152
Fiber: 7.8 grams
Protein: 5.2 grams
Monounsaturated fat: 2.1 grams
Omega-3 fats: 6.5 grams
Omega-6 fats: 1.7 grams
Manganese: 35% of the RDI
Thiamine (vitamin B1): 31% of the RDI
Magnesium: 28% of the RDI

Flaxseeds also contain a number of different polyphenols, especially lignans, which act as important antioxidants in the body ).

Lignans, as well as the fiber and omega-3 fats in flaxseeds, can all help reduce cholesterol and other risk factors for heart disease.

One large study combined the results of 28 others, finding that consuming flaxseeds reduced levels of “bad” LDL cholesterol by an average of 10 mmol/l .

Flaxseeds may also help reduce blood pressure. An analysis of 11 studies found that flaxseeds could reduce blood pressure especially when eaten whole every day for more than 12 weeks .

A couple of studies have shown that eating flaxseeds may reduce markers of tumor growth in women with breast cancer, and may also reduce cancer risk .

This may be due to the lignans in flaxseeds. Lignans are phytoestrogens and are similar to the female sex hormone estrogen.

What’s more, similar benefits have been shown regarding prostate cancer in men.

In addition to reducing the risk of heart disease and cancer, flaxseeds may also help reduce blood sugar, which may help lower the risk of diabetes.

2. Chia Seeds

Chia seeds are very similar to flaxseeds because they are also good sources of fiber and omega-3 fats, along with a number of other nutrients.

A 1-ounce (28-gram) serving of chia seeds contains :
Calories: 137
Fiber: 10.6 grams
Protein: 4.4 grams
Monounsaturated fat: 0.6 grams
Omega-3 fats: 4.9 grams
Omega-6 fats: 1.6 grams
Thiamine (vitamin B1): 15% of the RDI
Magnesium: 30% of the RDI
Manganese: 30% of the RDI

Like flaxseeds, chia seeds also contain a number of important antioxidant polyphenols.

Interestingly, a number of studies have shown that eating chia seeds can increase ALA in the blood. ALA is an important omega-3 fatty acid that can help reduce inflammation.

Your body can convert ALA into other omega-3 fats, such as eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), which are the omega-3 fats found in oily fish. However, this conversion process in the body is usually quite inefficient.

One study has shown that chia seeds may be able to increase levels of EPA in the blood.

Chia seeds may also help reduce blood sugar. A couple of studies have shown that whole and ground chia seeds are equally effective for reducing blood sugar immediately after a meal.

Another study found that, as well as reducing blood sugar, chia seeds may reduce appetite.

Chia seeds may also reduce risk factors of heart disease.

A study of 20 people with type 2 diabetes found that eating 37 grams of chia seeds per day for 12 weeks reduced blood pressure and levels of several inflammatory chemicals, including C-reactive protein (CRP).

3. Hemp Seeds

Image result for hemp seeds
Hemp seeds are an excellent source of vegetarian protein. In fact, they contain more than 30% protein, as well as many other essential nutrients.

Hemp seeds are one of the few plants that are complete protein sources, meaning they contain all the essential amino acids that your body can't make.

Studies have also shown that the protein quality of hemp seeds is better than most other plant protein sources.

A 1-ounce (28-gram) serving of hemp seeds contains:
Calories: 155
Fiber: 1.1 grams
Protein: 8.8 grams
Monounsaturated fat: 0.6 grams
Polyunsaturated fat: 10.7 grams
Magnesium: 45% of the RDI
Thiamine (vitamin B1): 31% of the RDI
Zinc: 21% of the RDI

The proportion of omega-6 to omega-3 fats in hemp seed oil is roughly 3:1, which is considered a good ratio. Hemp seeds also contain gamma-linolenic acid, an important anti-inflammatory fatty acid.

For this reason, many people take hemp seed oil supplements.

Hemp seed oil may have a beneficial effect on heart health by increasing the amount of omega-3 fatty acids in the blood .

The anti-inflammatory action of the omega-3 fatty acids may also help improve symptoms of eczema.

One study found that people with eczema experienced less skin dryness and itchiness after taking hemp seed oil supplements for 20 weeks. They also used skin medication less, on average.
